The only thing you’ll notice is that salmon has a pretty high price tag on it as compared to these other fish treats. But if you’re really looking for a delicious and healthy dinner, go for salmon! Anyway, salmon is usually cooked glazed; rubbed; sandwiched; used in chowder and other types of soup; used in burger patties as a substitute for meat; prepared with teriyaki sauce and in our case, grilled! Of course! La Caja China loves grilled fishes, too! So today, let us share with you this delectable grill-smoked salmon recipe!
What You’ll Need:
* 2 pounds salmon, fillet
* 2 teaspoons salt
* 1 tablespoon black pepper
* 2 garlic cloves, peeled and minced
* 2 tablespoons olive oil (or any healthy alternative)
* 2 tablespoons rum
* 3 tablespoons butter, melted
1. In a bowl, combine your melted butter, rum, olive oil, minced garlic, salt and pepper. Mix thoroughly to distribute the flavors evenly.
2. Get a tray or a large plate and lay your salmon fillets on it. Pour the sauce that you have just created over the fillets and get a brush to evenly spread it. Allow the fish to absorb the mixture even more by letting it sit for 30 minutes.
3. While waiting, you can now start preparing your La Caja China grill. Place the ash pan and grid and light up your charcoals. After 20 minutes, they should all be lit up so spread them evenly on the grid. Leave a charcoal-free space at one end in case you need to cool a fillet down.
4. When the grill is ready and the fish has been marinated for 30 minutes, put each of the fillets on the grill carefully. Use a wide spatula when placing the fish instead of tongs. This will prevent the fillets from breaking.
5. Once done, cooking time starts now! Let the fillet cook for 10 minutes, for every inch of thickness. For example, if your fillet is an inch thick, you should let it cook on the grill for 10 minutes. Grill it for 7 minutes on one side; turn it on its other side and let it cook for another 3 minutes. Now if your fillet measures half an inch, cooking time should only be 5 minutes. Grill it for 3 minutes on one side; turn it on the other side and let it cook for another two minutes!
6. When the fillets are almost done, use your smoker pistol to add a smoky twist to your dish! When the fish is already flaking apart on its thickest part, it’s already done. It should show a light color pink and no shine at all. If it’s shiny, it’s not yet cooked (unless you’re using some sort of barbecue glaze).
