Roasting a whole pig is a tradition that a lot of cultures in the world share. When we think of roasted pork, we think about Cuba. However, you should note that this special pig dish is also very popular in other countries such as the Philippines, the UK and even here in America. Now while a hog roast is definitely a delicious treat during birthdays, weddings and special occasions, we can’t always buy a whole pig just so we can eat a sumptuous meal! What if there’s really no reason to celebrate? What if it’s just an ordinary day and you’re just craving for the crispy skin and tender meat of a well-cooked lechon? The solution is to roast a pig leg! Have you tried it? No? Then let us help you! This recipe we’ll share has a Cuban twist to it.
Scrub the surface of your pig leg or ham if it’s been salt cured in order to get rid of the mold. Soak it in water for about 12 hours and then rinse it. Trim the fat to about a quarter of an inch and score the skin into diamond shapes. Doing so will allow your marinade to sink in thus making it more flavorful.
Marinade your pig leg using our famous adobo sauce. Make sure that the liquid gets into the scores on the skin to let the flavors and spices sink in. Cover it up and store in the fridge for about 4 hours. For best results, you might want to let it soak overnight.
When the meat is ready for grilling, set up your La Caja China and light up the coals. Take the ham out of the refrigerator and let it sit in room temperature for 30 minutes before placing it on the grill. Allow it to cook slowly just as you are grilling a whole pig. You can baste it every 30 minutes to make it even more delicious. When the bottom part is cooked, turn it on the other side. After almost an hour, check on it and be very careful not to burn the skin. Once cooked, allow it to cool down. Slice it up or you may also serve it in whole for a more appealing presentation. Add garnishes to impress your guests.
